Turkey Tortilla Soup Recipe

I just finished cooking this recipe and am about to try it!

I fried the stupid tortilla strips in saved oil from a fish fry, it stunk up the house something horrid, I recommend labeling your reusable oil because it would have been fine if I was doing fish, but I wasn't.

I ate this and 2 coming on 3 frosting covered cupcakes. I am horrible, but hey at least I voted today :)

food fun part 1

Caramel popcorn

10 cups popped popcorn
200ml sweetened condensed milk
110g ( 1/2 cup) brown sugar
110g ( 1/2 cup) caster sugar
80g unsalted butter
Preheat oven to 170C. Place popcorn in a large heatproof bowl, set aside. Line 2 large baking trays with non-stick baking paper.
Place the sweetened condensed milk, sugar and butter in a medium-size saucepan over a low heat, stirring to dissolve the sugar. Bring to the boil and simmer for 1 minute, then remove from the heat.
Pour the caramel mixture over the popcorn and, using a wooden spoon, stir until all the popcorn is coated in the caramel mixture. Spread popcorn onto prepared trays. Place popcorn in oven and bake for 10-12 minutes or until golden brown, stirring often.
Remove and set aside to cool completely.
Makes 10 cups

I would love to do this for his 4th and up birthday. From my living with diabetes newsletter it says not to give children younger than 4 popcorn because of choking hazards, to each his own.

I want mateo to grow up having healthy food choices readily available for him not as a dictator parent trying to take all the fun out of how delicious food is, but as a parent who doesnt want their child to suffer like I did, constantly having my weight and health under a microscope and never being physically "perfect". I just want my kid to be more interested in play and fun than junk food and tv. In my dillusional world I imagine him running in and takin slices of apples and a agua de sandia drink and running back outside to kick the ball around with his dad.... oh in a perfect world :)

mateo 9 months

no longer in the womb! my water broke on my birthday at 5:27 am. I randomly woke up, was about to text my man when I thought I pissed myself for the thousandth time, yeah tmi. Anyway so fast forward another 9 months and from counting fingers and toes from an ultrasound I am chasing around a happy baby boy who crawls at mach speed! 
So I am extremely happy with mah babeh! He has the  greatest personality ever- he stares down my brothers friends... is suspicious of random people, things and going-ons.
Really though I am truly blessed to have such a great son and baby daddy haha. He helps with everything and does most of the maintaining of things. Despite both of my mens inherited temperments our little fam bam is usually smooth sailing. Hopefully he inherits my husbands athleticism also because my family has never been physically inclined to do anything and we carry this parasite of a trait of having diabetes meaning weak self control when it comes to food.
This is where the next series of blog posts are going to come from. I have been assigned head chef of Casa de Loza. So far some of my favorite dishes are the following:

My next mission is to find fun foods for Mateo to eat, meaning ways to make food fun, like snacks and such!

My Son

**It's A Boy!**


I realize now that I am actually having a SON. As in "this is my son, Mateo." Up to now I have only thought of it as, I'm having a BABY. Babies are everywhere, baby here, baby there, I have nephews and nieces but this time this little baby belongs to me and is MY son. He will be learning the ways of the world from his father, uncle and myself. The future of his personality and his cognitive development rest on the influences that I expose him to. It is a reality check that I am getting comfortable with coming into my 23rd week of pregnancy.

The exciting part is the baby part. For me as a female and shopaholic I love the idea of buying all the cute little outfits and just holding my little baby in my arms. His little feet, arms, legs, body... it's great! I just want to love my child and be with him and make him the best person I can. 
I have a hectic past because I want to live fast, but I want to die old. I want to watch my son grow up into an amazing human being, and any child that follows thereafter. My friends and I are part of the younger gen of moms, being in our early 20's, and they still want to concentrate on living fast and I'm down to just be a mom and be all about my kid. I don't need that fast life anymore, but I won't become a hermit to social life either. We'll see how that works out when the time comes.
